Buckwheat Blini With Herbed Smoked Salmon Cream Cheese
* 2/3 cup milk (150 mL)
* 1 tbsp unsalted butter, plus 1/4 cup clarified butter (15 mL plus 60 mL)
* 3/4 cup buckwheat flour (175 mL)
* 2 1/2 teaspoons sugar (12 mL)
* 1/4 tsp fine salt (1 mL)
* 1 tsp dry active yeast (5 mL)
* 1 tbsp (15 mL) lukewarm water, about 100 to 115 degrees F (50 to 57 degrees C)
* 1 x egg yolk, reserve and cover egg white
* Herbed Smoked Salmon Cream Cheese, recipe follows
* Caviar, to top blini (optional)
* Fresh dill, to garnish blini
